Cucumber Gazpacho with Yogurt, Cilantro and Coriander

This recipe from Feasting at Home calls for Greek yogurt, but if you want to try something a little different, try siggi’s Icelandic-style Skyr Yogurt. From there, the garnish options are nearly endless, although we’re partial to a mix of poached shrimp, lime zest and sour cream.
