Recipe: Vegan Raspberry Lemon Scones
Is there anything better than waking up to scones? Waking up to multiple scones, that’s what.* These vegan scones make for a great grab-and-go breakfast — or a perfect sit-down-and-savor-it breakfast. Vegan Raspberry Lemon Scones
1¾ cups whole wheat all-purpose flour
⅓ cup granulated sugar
1 tablespoon lemon zest
½ tablespoon baking powder
¼ teaspoon salt
⅓ cup plus 1 tablespoon chilled coconut oil, divided
¾ cup fresh raspberries
½ cup and 3 tablespoons unsweetened almondmilk, divided
1 tablespoon lemon juice
½ cup soaked raw cashews
2 tablespoons maple syrup
⅓ cup Nature’s Path Organic Pumpkin Seed + Flax Granola
Preheat oven to 425°F. In a large bowl, mix together flour, sugar, lemon zest, baking powder and salt. Use your hands to cut in ⅓ cup of coconut oil (or vegan butter) until it’s cut into small pea-sized pieces. Gently mix in the raspberries.
Stir together ½ cup almond milk and lemon juice. Add the almondmilk and lemon juice to the dry ingredients and stir gently with a fork until just barely combined. Transfer the dough to a floured counter and knead 8 – 12 times. Shape the dough into a one-inch-thick circle. Cut into eight triangles. Transfer to a baking sheet lined with parchment paper and bake for 15 minutes or until the scones are golden-brown.
Combine the soaked cashews, 3 tablespoons of almond milk, maple syrup and 1 tablespoon of coconut oil in a high-speed blender. Blend on high, pausing to scrape down the sides of the blender as needed, until smooth and creamy. Add more almondmilk to thin, if needed. Drizzle scones with icing and sprinkle with Nature’s Path Organic Pumpkin Seed + Flax Granola.
